3 Ingredient Baked Cheddar Cauliflower Bites
3:00 pm hits you and you’re feeling a little hungry, it’s not quite dinnertime yet; you need a snack!
It’s easy to reach for a bag of chips or a candy bar, but why not try something healthy that will satisfy you longer? These healthy baked cauliflower bites are made with just 3 ingredients and make for the perfect low-carb snack!
What do you need?
2 cups cauliflower florets (fresh or frozen)
1 egg
1-cup cheddar cheese
Salt and Pepper (optional)
¼ tsp. Oregano (optional)
¼ tsp. Garlic Powder (optional)
Instructions:
Pre-heat oven to 375F. Grease a 24-cup mini muffin tin with oil and set aside.
(You can also use a standard 12 cup muffin tin)
Place cauliflower florets in a microwave safe bowl and cover with plastic wrap. Microwave for 7-8 minutes or until cauliflower is tender. You can also achieve this on the stovetop by blanching cauliflower in hot water for 5 minutes. Be sure to drain well.
Place cauliflower in a food processor and pulse for just a few seconds until cauliflower resembles rice. Remove from food processor, place in a clean dishcloth and squeeze to drain as much water as you can out of the cauliflower.
Place cauliflower in a mixing bowl; add egg, cheddar cheese, salt and pepper, herbs and garlic if desired. Mix with a spoon until fully combined. Scoop a tablespoon of the mixture into each muffin tin using a cookie scoop or by hand.
Bake for 12-15 minutes or until edges are golden brown and the middle is no longer soft. Remove from oven and cool for a few minutes before removing from pan.
Serve with your favorite sauce.
