Banana Pancakes

 

Mash the banana with a fork and then mix in the eggs. They look like crepes (thin but fluffy) and taste a little like French toast. The batter’s somewhat delicate, so keep the pancakes small and use a thin spatula for flipping.

2 Cups Raw Walnuts

3 Tablespoons Raw Honey

Walnut Butter

Chop up two cups of raw walnuts in a high-speed blender, then add in up to three tablespoons of raw honey (depending on your preference for sweetness). Blend until smooth. Eat by the spoonful!

2 cups pitted Medjool dates

Pulse water and dates in a food processor to a thick, smooth paste;

use a little water to thin if necessary. It should be the consistency of a thick jam. Add the oats and pulse until blended. Press mixture into the bottom of a glass pan to about 1/2-inch thick and chill. Once chilled and firm, cut and serve.

Peel bananas and slice into 1/2-inch discs. Arrange banana slices in a single layer on a large plate or baking sheet. Freeze for 1-2 hours. Place the banana slices in a food processor or powerful blender. Puree banana slices, scraping down the bowl as needed. Puree until the mixture is creamy and smooth. Add the peanut butter and puree to combine. Serve immediately for soft-serve ice cream consistency. If you prefer harder ice cream, place in the freezer for a few hours and then serve

4 boneless, skinless chicken breasts

Slow cooker salsa chicken

 

Place chicken breasts in a slow cooker and cover with salsa. Toss until the

chicken is covered. Cover and cook on high for 4 hours (or low for 6-8 hours), or until the chicken shreds easily with a fork. Shred the chicken in the slow cooker and toss with the remaining salsa and juices until well-mixed. This chicken is great for tacos!

Using a hand mixer, make the instant pudding according to the package directions, only substitute heavy cream for the milk. After the pudding and heavy cream are well combined, place it in the refrigerator for a few minutes, and mix again until it’s super thick.
